Northern Thai Food
The Thai food of northern Thailand is not Bangkok Thai food. The north has its own cuisine.
I’ve lived here (in Lamphun Province) for over 25 years. My dinners are often gang hung lay (pork stew), app mu (I can’t explain it, but it’s a favorite), nam prik noom (mashed green chiles), northern Thai sausage, nam (raw fermented sausage-another favorite), black laab, mashed eggplant with hard boiled eggs, spicy pounded jackfruit, and of course khao soi, on and on and on.
Oh sure, you can get green, red, panang, and mussuman curries in Chiang Mai. And yes, you can get good pad kee mao, pad Thai, pad gapao, etc. But that’s the food of the Central Plain and Bangkok.
If you want to sample Northern Thai food in an easy, convenient way head to the Airport Mall in central Chiang Mai.

Besides my northern Thai wife, I had three other northern Thai friends help me produce the video above. A White boy alone going to the Airport Mall food court just won’t have the cultural chops to comprehend all the different cuisines and food.
